OK, since the 1st photo I worked on it, it's pretty much down pat now. More firm, fluffy, crispy on the outside... just like a real waffle... Might have to recalculate the carbs, but it's still close.

This will look too wet at first, after setting 10 minutes you should almost be able to stand a fork up in the batter.
